Consider new packaging strategy

Describe the Bug

Currently gen-deb.in is the only method of packaging, which seems to be a manually packaged deb file.

Expected Behavior

Leverage cmake built in methods to create packages where possible:

• bundle (mac): https://cmake.org/cmake/help/latest/cpack_gen/bundle.html
• deb (debian/linux): https://cmake.org/cmake/help/latest/cpack_gen/deb.html
• dmg (mac): https://cmake.org/cmake/help/latest/cpack_gen/dmg.html
• rpm (redhat/linux): https://cmake.org/cmake/help/latest/cpack_gen/rpm.html
