Screenshots: Site templates documentation

Problem

docs/user-guide/configuration/site-templates.md reuses checkout-form-editor.png, checkout-form-step.png, and checkout-forms-list.png to illustrate the template selection step in checkout forms, but those are the same generic checkout shots used everywhere else. The doc has its own concepts that need their own shots.

Doc edit

Update docs/user-guide/configuration/site-templates.md to use the new shots instead of generic checkout images. Also align docs/user-guide/configuration/auto-search-and-replace-in-site-templates.md.

Done when

• No generic checkout-form-step.png / checkout-form-editor.png references remain in site-templates.md.
• New shots added to static/img/config/.
• PR opened with Resolves for this issue and Ref #64.
