Registry: ESPHome-Config Python is now a build-profile uv workspace #1762

ESPHome-Config's Python moved from the lint-only profile to build, laid out as a root uv workspace (root pyproject.toml, uv.lock, and tests/), with easystart/python as its first member.

Its registry/repos.json entry still declares "profiles": {"python": "lint-only"}, and its driftNote still describes "ruff and pyright config only, no tests, no uv.lock".

Once ptr727/ESPHome-Config#177 merges:

• Set profiles.python to build.
• Replace that driftNote with one that says the repo's Python is a root uv workspace whose members live under subtrees.
