fix(iOS, Stack): re-evaluate overflow when a custom header item is resized - #5159
On iOS 26+, a custom left/right header item (unstable_headerLeftItems / unstable_headerRightItems with type: 'custom') that is too wide for the bar is moved into the overflow ("…") menu. If the item later shrinks to a size that fits, it stays in the overflow menu. Since a custom item has no menuRepresentation, the overflow menu shows nothing, so the item becomes unreachable.
We hit this on iPhone Duo (iOS 27.1): a header item whose width follows the window is 773pt when unfolded. Folding the device lays out the folded bar while the item is still 773pt wide, so it goes to the overflow menu. JS then shrinks it to 288pt, which fits, but the item never comes back. Anything that re-applies the header config (e.g. pushing another screen and going back) brings it back.
updateLayoutMetrics:oldLayoutMetrics: only calls invalidateIntrinsicContentSize when the size changes. As the comment in setVisibilityPriority: notes, the bar only re-evaluates which items fit when it is handed its items again.
Changes
When the size of a left/right header subview that is already in the bar changes, call setNeedsViewControllerUpdate on the header config. The config is then re-applied once at the end of the mounting transaction, the same path setVisibilityPriority: uses.
Test plan
Reproduced and verified on the iPhone Duo simulator (iOS 27.1) with @react-navigation/native-stack and a custom left item whose width is measured from the content:
navigation.setOptions({unstable_headerLeftItems: ()=>[{type: 'custom',hidesSharedBackground: true,element: <Viewstyle={{width: measuredWidth,height: 40}}>{/* segmented control */}</View>,},],});
Unfold the device so the item is wide (773pt), then fold it (item shrinks to 288pt).
Before: the item disappears and the bar shows the overflow button with nothing in it, until the header config is re-applied by navigating away and back.
After: the item comes back right after it shrinks. Repeated unfold/fold cycles keep the item in the bar and it stays interactive.
We ship this as a patch on 4.30.1 in our app.

…sized
On iOS 26+, a custom left/right header item that does not fit is moved into the
overflow menu. When the item later shrinks to a size that fits, only its intrinsic
content size is invalidated, so the bar never re-evaluates the items and the item
stays in the overflow menu.
Request a header config re-apply (the same path `setVisibilityPriority:` uses) when
the size of an item that is already in the bar changes.
On iOS 26 and later, an Auto Layout header subview requests a header view-controller update after its size changes when it has a bar button item.

Summary
Refresh header after size changes ios/legacy/RNSScreenStackHeaderSubview.mm
When the Auto Layout subview’s size changes, it requests a header view-controller update if _barButtonItem exists. The path continues to invalidate intrinsic content size.
Resizing a custom header item may reset a native menu selection. The change is mergeable with awareness of this localized issue.

Preserve native menu selection during a size refresh.
If a native item has a single-selection submenu, UIKit can update its selection without changing the config. A resize rebuilds that menu from the config and can reset the selection.
Avoid rebuilding unrelated native menu items for a size-only refresh. Continue to apply actual config changes.
