Support for pybind11 3.0

I noticed that this package is used in many conda-forge package, but it is not compatible with pybind11 3 (see https://github.com/traversaro/xtensor-python/actions/runs/16344875074/job/46175938823?pr=1). So I opened this issue to track pybind11 3 support.

Reopening because the build still fails with pybind11 3.

@JohanMabille would it be possible to release a version with pybind11 3.* compatibility? This would help the pybind11 3 migration (https://conda-forge.org/status/migration/?name=pybind11_abi11) progress, as several failing packages have a dependency on xtensor-python. Thanks a lot in advance!
