Upgrade to TypeScript 5.x

This is the final step of the work, which started a few months ago, to renovate the whole toolchain and build targets of node-wot. This PR focuses on upgrading to the latest typescript stable version. Main points:

• now the recommended module target is node16 (or nodenext) as also suggested in opcua: nsu in nodeId (fixing #1334) #1335 . I checked and there are no big implications other than garbage in the generated examples scripts (I also solved this issue by leaving the old module target for the examples project)
• I had to do minor library updates and I bumped @types/node to 18x (which is now the oldest supported version of node for node-wot in the CI).
• coap library is depending on lru-cache which has some typescript issues (see Typescript error: Property 'forEach' in type 'LRUCache<K, V, FC>' is not assignable to the same property in base type 'Map<K, V>'. isaacs/node-lru-cache#354) I skipped libcheck for now, until coap mainteners release a new version.

I just released a new patch release 1.4.1 containing the changes from coapjs/node-coap#392 that should resolve this aspect :)
